Description

Ingredients

  • 3 cups chilled mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup all-purpose flour (gluten-free option available)
  • 2 tablespoons Parmesan cheese (optional)
  • 2 tablespoons fresh chives, finely chopped
  • 1/3 cup sour cream
  • Salt to taste
  • 2 eggs, beaten


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs and sour cream until smooth.
  3. Stir in shredded cheese, Parmesan, and chopped chives.
  4. Gently fold in the chilled mashed potatoes to avoid overmixing.
  5. Spoon mixture into a greased muffin tin, filling each cup about three-quarters full.
  6. Bake for 20–25 minutes until golden brown and puffed up.
  7. Allow cooling slightly before removing from the muffin tin.
