Ingredients
- 3 cups chilled mashed potatoes
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/4 cup all-purpose flour (gluten-free option available)
- 2 tablespoons Parmesan cheese (optional)
- 2 tablespoons fresh chives, finely chopped
- 1/3 cup sour cream
- Salt to taste
- 2 eggs, beaten
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together eggs and sour cream until smooth.
- Stir in shredded cheese, Parmesan, and chopped chives.
- Gently fold in the chilled mashed potatoes to avoid overmixing.
- Spoon mixture into a greased muffin tin, filling each cup about three-quarters full.
- Bake for 20–25 minutes until golden brown and puffed up.
- Allow cooling slightly before removing from the muffin tin.
Notes
Experiment with different cheese types or add herbs for flavor variations. If using pre-made mashed potatoes, let them cool before mixing.
