Description

Masa harina biscuits blend flaky pastry with the unique flavor of masa harina, creating a delicious treat perfect for any occasion.


Ingredients

  • 1 1/4 cups cold cultured buttermilk
  • 1 tablespoon honey
  • 2 cups all-purpose flour
  • 1 cup masa harina
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 tablespoons cold salted butter, cut into pieces


Instructions

  1. Preheat your oven to 425°F.
  2. In a small bowl, mix the cold buttermilk and honey together and set aside.
  3. In a food processor, combine the dry ingredients: flour, masa harina, baking powder, baking soda, and salt. Pulse to mix.
  4. Add the cold butter pieces into the dry mixture.
  5. Pulse about 25 times or until the mixture resembles coarse crumbs.
  6. Slowly add the buttermilk mixture while pulsing until the dough starts to come together.
  7. Turn the dough onto a floured surface. Bring it together gently, adding a little more flour if it feels too wet.
  8. Pat or roll the dough to about one inch thick. Using a 2 1/2 inch round biscuit cutter, cut the biscuits. Flour the edges of the cutter between cuts to prevent sticking.
  9. Place the biscuits on parchment paper or a Silpat liner. Bake for about 15 minutes.
  10. Serve hot out of the oven with butter or honey for the best flavor.

For best results, use cold ingredients and handle the dough gently.
