Ingredients
- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup sundried tomatoes, chopped
- 1/2 cup chicken broth
- 1/2 teaspoon Italian seasoning
Instructions
- In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined.
- Form into meatballs and set aside.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes.
- In the same skillet, add heavy cream, sundried tomatoes, chicken broth, and Italian seasoning. Stir to combine.
- Return meatballs to the skillet and let them simmer in the sauce for 10-15 minutes until cooked through.
- Serve with pasta, mashed potatoes, or crusty bread.
