Ingredients
- 5 pounds (680 g) ground beef
- 1 medium onion, chopped
- 3 cans (411 g each) diced tomatoes
- 3 cans (396 g each) beef broth
- 3 cans (396 g each) water
- 6 medium carrots, cut into bite-sized pieces
- 6 ribs celery with leaves, chopped
- 6 sprigs fresh parsley, chopped
- 1 bay leaf
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) chili powder, or more to taste
- 5 teaspoon (3 ml) dried thyme
- 2 cups (480 ml) uncooked elbow macaroni
Instructions
- Warm a large soup pot on medium-high heat. Place the ground beef and onion inside; sauté and mix until the beef is browned and crumbly and the onion becomes see-through, approximately 5 to 7 minutes. Remove and discard the excess fat.
- Combine the diced tomatoes, beef broth, water, carrots, celery, parsley, bay leaf, salt, chili powder, and thyme in the pot; allow it to reach a simmer and let it cook gently for 3 to 4 hours.
- Incorporate the macaroni; continue cooking, stirring from time to time, until it reaches a tender yet slightly firm texture, around 8 to 10 minutes.
