Ingredients
- 1 tablespoon olive oil (15 ml)
- 3 cloves garlic, minced
- 1 cup onion, chopped (240 ml)
- 2 cups celery, chopped (480 ml)
- 2 cups carrots, chopped (480 ml)
- 1 large red bell pepper, chopped
- 1 10-ounce can tomatoes with green chilis
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) pepper
- 1 teaspoon (5 ml) thyme
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- 1 ½ pounds chicken thighs or breast, cut into small chunks (680 g)
- 3-4 cups chicken stock (720-960 ml)
Instructions
- Warm a sizable dutch oven or stock pot over medium heat. Introduce the olive oil, minced garlic, chopped onion, red bell pepper, celery, and carrots. Cook the vegetables for 4-5 minutes, stirring every so often.
- Pour in the canned tomatoes without draining, the chicken stock, seasonings, and chicken pieces.
- Raise the heat until it begins to boil, then lower the heat to let it gently cook on low, covering the pot.
- Let the soup simmer with the lid on for 30 minutes.
- Right before serving, take out the chicken and shred it, then return it to the soup. Serve with freshly grated parmesan, salt, and pepper.

- For enhanced flavor, opt for bone-in chicken thighs over boneless breast.
