Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 3 cloves garlic, minced
  • 1 cup onion, chopped (240 ml)
  • 2 cups celery, chopped (480 ml)
  • 2 cups carrots, chopped (480 ml)
  • 1 large red bell pepper, chopped
  • 1 10-ounce can tomatoes with green chilis
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) pepper
  • 1 teaspoon (5 ml) thyme
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1 ½ pounds chicken thighs or breast, cut into small chunks (680 g)
  • 3-4 cups chicken stock (720-960 ml)


Instructions

  1. Warm a sizable dutch oven or stock pot over medium heat. Introduce the olive oil, minced garlic, chopped onion, red bell pepper, celery, and carrots. Cook the vegetables for 4-5 minutes, stirring every so often.
  2. Pour in the canned tomatoes without draining, the chicken stock, seasonings, and chicken pieces.
  3. Raise the heat until it begins to boil, then lower the heat to let it gently cook on low, covering the pot.
  4. Let the soup simmer with the lid on for 30 minutes.
  5. Right before serving, take out the chicken and shred it, then return it to the soup. Serve with freshly grated parmesan, salt, and pepper.

Notes

  • For enhanced flavor, opt for bone-in chicken thighs over boneless breast.
  • Add in extra veggies like zucchini or spinach for added nutrition.
