Description

A quick and delicious low-carb version of egg rolls, combining ground turkey or pork, fresh vegetables, and savory seasonings for a hearty meal.


Ingredients

  • 1 lb ground turkey or pork
  • 1 package coleslaw mix (or 4 cups shredded cabbage and carrots)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste


Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add the ground turkey or pork, breaking it up with a spatula until browned and cooked through.
  3. Add garlic and ginger, and cook for another minute.
  4. Stir in coleslaw mix and cook until just wilted, about 3-5 minutes.
  5. Pour in soy sauce and mix well.
  6. Remove from heat, stir in green onions and season with salt, pepper, and red pepper flakes if using.
  7. Serve warm and enjoy!

Notes

For added flavor, consider marinating the meat in soy sauce before cooking. Adjust spice level to your preference with red pepper flakes.
