Description
A healthy and delightful snack combining bananas, peanut butter, and dark chocolate, inspired by the classic Snickers bar.
Ingredients
- 3 ripe bananas
- 1/4 cup natural peanut butter (or almond butter)
- 1/4 cup dark chocolate chips (or sugar-free chocolate chips)
- 1 tbsp coconut oil (optional, for a smoother chocolate coating)
- 1/4 cup unsalted roasted peanuts, chopped
- 1-2 tsp honey or maple syrup (optional)
- Pinch of sea salt (optional)
Instructions
- Prepare the bananas by peeling and cutting them into 1-inch thick slices.
- Lay the banana slices out on a parchment-lined tray and freeze them for at least 1 hour until firm.
- While the banana slices freeze, slightly soften the peanut butter in the microwave if it’s too thick. Mix in a small drizzle of honey or maple syrup for added sweetness, if desired.
- Once the banana slices are frozen, spread a small layer of peanut butter on top of each slice. Create a “sandwich” by placing a second banana slice on top.
- In a microwave-safe bowl, melt the dark chocolate chips with the optional coconut oil in 20-second intervals, stirring until fully melted and smooth.
- Dip each banana sandwich into the melted chocolate. Roll them in chopped peanuts, pressing lightly to coat. For an extra touch, sprinkle a pinch of sea salt on top.
- Place the coated banana sandwiches back on the parchment-lined tray; freeze for an additional 1-2 hours, or until the chocolate is completely firm.
- Once the chocolate has set, enjoy immediately or store in an airtight container in the freezer for up to 1-2 weeks.
