A guilt-free dessert made with ripe bananas, creamy peanut butter, and rich dark chocolate, perfect for satisfying your sweet tooth.
Ingredients
- 2 large firm, ripe bananas (about 240g total)
- 2-3 tablespoons natural creamy peanut butter (unsweetened)
- 2 tablespoons roasted unsalted peanuts, roughly chopped
- 1/4 cup (40g) dark chocolate chips (70% cacao or higher)
- 1 teaspoon coconut oil
- Sea salt flakes (optional)
Instructions
- Peel the bananas and slice them into thick coins, about 1/2 inch each—aim for 16-20 coins.
- Arrange the banana slices on the parchment-lined baking sheet, ensuring they do not touch each other.
- Freeze the banana slices for 15-20 minutes, until they are firm but not rock hard.
- Once firm, remove from the freezer and spread about 1/2 teaspoon of peanut butter on each banana coin.
- Sprinkle each with chopped peanuts and a pinch of sea salt if you choose to use it. Feel free to add any of your optional toppings at this stage.
- In a microwave-safe bowl, combine chocolate chips and coconut oil.
- Microwave in 15-second intervals, stirring each time until the mixture is melted and smooth, which should take about 45 seconds total.
- Drizzle the melted chocolate over each banana bite or dip the tops for a thicker chocolate coating.
- Return the baking sheet to the freezer for 30-60 minutes, or until the chocolate is set, and the bananas are frozen solid.
- For best texture, allow the treats to sit at room temperature for 5 minutes before serving. Enjoy immediately, and store any leftovers in a freezer-safe container.
