Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 lb ground beef (lean) (454 g)
  • 1 medium onion (diced)
  • 2 medium carrots (peeled and sliced)
  • 2 stalks celery (sliced)
  • 2 cloves garlic (minced)
  • 1 cup (240 ml) potatoes (diced)
  • 2 cans diced tomatoes (undrained) (411 g)
  • 1 can tomato sauce (425 g)
  • 4 cups beef stock (946 ml)
  • 2 teaspoons (10 ml) Italian seasoning
  • Salt & pepper
  • 1 cup frozen corn (166 g)
  • 1 cup frozen green beans (125 g)


Instructions

  1. In a large pot or Dutch oven, warm the olive oil over medium heat.
  2. Add the ground beef and cook until it turns brown, breaking it up with a spoon as it cooks.
  3. Remove the browned beef from the pot and set it aside. Drain any excess fat.
  4. In the same pot, add a little more oil if necessary. Add the onion, carrots, and celery. Sauté until the onions are clear and the vegetables start to soften.
  5. Add the garlic and cook for one additional minute.
  6. Return the browned beef to the pot, along with the potatoes, tomatoes, tomato sauce, beef stock, Italian seasoning, salt, and pepper.
  7. Increase the heat to medium-high and bring the mixture to a boil, then lower the heat to a gentle simmer, cover, and cook for about 20 minutes, or until the vegetables are tender.
  8. Mix in the frozen corn and green beans and continue simmering until they are thoroughly heated, about 10 more minutes.
  9. Taste the soup and adjust the seasoning with additional salt and pepper if necessary.
  10. Serve the soup in bowls and enjoy it warm.

Notes

  • For a healthier option, use lean ground beef with lower fat content.
  • Consider adding extra vegetables like peas or bell peppers for more nutrition and flavor.
