Ingredients
- 2 tablespoons olive oil (30 ml)
- 1 lb ground beef (lean) (454 g)
- 1 medium onion (diced)
- 2 medium carrots (peeled and sliced)
- 2 stalks celery (sliced)
- 2 cloves garlic (minced)
- 1 cup (240 ml) potatoes (diced)
- 2 cans diced tomatoes (undrained) (411 g)
- 1 can tomato sauce (425 g)
- 4 cups beef stock (946 ml)
- 2 teaspoons (10 ml) Italian seasoning
- Salt & pepper
- 1 cup frozen corn (166 g)
- 1 cup frozen green beans (125 g)
Instructions
- In a large pot or Dutch oven, warm the olive oil over medium heat.
- Add the ground beef and cook until it turns brown, breaking it up with a spoon as it cooks.
- Remove the browned beef from the pot and set it aside. Drain any excess fat.
- In the same pot, add a little more oil if necessary. Add the onion, carrots, and celery. Sauté until the onions are clear and the vegetables start to soften.
- Add the garlic and cook for one additional minute.
- Return the browned beef to the pot, along with the potatoes, tomatoes, tomato sauce, beef stock, Italian seasoning, salt, and pepper.
- Increase the heat to medium-high and bring the mixture to a boil, then lower the heat to a gentle simmer, cover, and cook for about 20 minutes, or until the vegetables are tender.
- Mix in the frozen corn and green beans and continue simmering until they are thoroughly heated, about 10 more minutes.
- Taste the soup and adjust the seasoning with additional salt and pepper if necessary.
- Serve the soup in bowls and enjoy it warm.
