Description
A vibrant and fresh Loaded Cucumber & Avocado Sandwich that combines creamy avocado, crunchy cucumber, and leafy greens for a delicious lunch.
Ingredients
- 2 slices of bread of choice (whole grain, sourdough, or rye)
- 1 ripe avocado
- 1 medium cucumber, thinly sliced
- 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
- 1/4 cup cherry tomatoes, halved (optional)
- 2 tbsp red onion, thinly sliced
- 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
- 1 tsp lemon juice
- Salt and pepper to taste
- 1 tsp olive oil or favorite sandwich spread (optional)
Instructions
- Toast the bread slices lightly if desired.
- In a bowl, mash the avocado with lemon juice, salt, and pepper to taste.
- Spread the mashed avocado evenly over one side of each bread slice.
- Layer cucumber slices generously on top of the avocado spread.
- Add fresh leafy greens, sliced red onions, and cherry tomatoes if using.
- Sprinkle fresh herbs on top.
- Drizzle a little olive oil or your favorite sandwich spread if desired.
- Close the sandwich with the other bread slice.
- Cut in half and serve immediately.
Notes
For best results, use fresh ingredients and toast the bread for added texture.
