Description

Ingredients

  • 4 strips beef bacon (100g)
  • 1 yellow onion, diced (150g)
  • 4 cloves garlic, minced
  • 1 tbsp ghee or vegetable oil (15ml)
  • 36 oz (1 kg) cauliflower florets
  • 24 oz (700 ml) chicken broth
  • 1 1/2 tsp (8 ml) salt (plus more to taste)
  • 1/4 tsp (1 ml) black pepper
  • 1 cup (240 ml) full fat coconut milk
  • 1/4 cup (60 ml) green onion, chopped
  • 1 cup shredded white cheddar cheese (100g)
  • 1 bay leaf
  • 4 sprigs of thyme


Instructions

  1. Place a large pot on medium-high heat. Once it’s heated, cook the bacon strips until they are crispy, then remove them and let them drain on paper towels.
  2. Next, toss the diced onion, minced garlic, and ghee (if used) into the pot. Sauté until the onion is soft and clear.
  3. Add the cauliflower, chicken broth, salt, thyme, bay leaf, and pepper to the pot. Bring everything to a boil, then reduce the heat. Allow the mixture to simmer for 15-20 minutes, or until the cauliflower is soft.
  4. Once the cauliflower is tender, blend 2 cups of the soup in a blender until smooth, then return it to the pot.
  5. Take the pot off the heat and mix in the coconut milk and shredded cheddar cheese. Stir until the cheese is completely melted and the mixture is well blended.
  6. Dish up the soup, garnishing with crispy bacon, chopped green onion, and extra cheddar, then savor it!

Notes

  • For a more decadent flavor, opt for ghee instead of vegetable oil when cooking the onion and garlic.
  • Blend 2 cups of the soup for a velvety texture before returning to the pot.
  • Enhance with additional cheddar cheese for an extra cheesy boost.
