Description

A hearty and colorful breakfast dish featuring diced potatoes, bell peppers, spinach, eggs, and cheese, perfect for a joyful morning gathering.


Ingredients

  • 4 medium Potatoes, diced
  • 1 Bell pepper, chopped
  • 1 Onion, chopped
  • 2 cups fresh Spinach
  • 4 Eggs
  • 1 cup Cheese, shredded
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Dice the potatoes and boil them until tender.
  2. Heat olive oil in a pan, add chopped onions and bell peppers, and sauté until soft.
  3. Add the boiled potatoes and cook until lightly crispy.
  4. Stir in spinach and cook until wilted.
  5. Create small wells in the mixture and crack eggs into them. Cover the pan and cook until the eggs reach the desired doneness.
  6. Sprinkle with cheese, salt, and pepper before serving.

Notes

Use russet potatoes for a fluffier texture. Experiment with different bell pepper colors and cheeses for added flavor.
