Ingredients
- 4 medium Potatoes, diced
- 1 Bell pepper, chopped
- 1 Onion, chopped
- 2 cups fresh Spinach
- 4 Eggs
- 1 cup Cheese, shredded
- 2 tablespoons Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Dice the potatoes and boil them until tender.
- Heat olive oil in a pan, add chopped onions and bell peppers, and sauté until soft.
- Add the boiled potatoes and cook until lightly crispy.
- Stir in spinach and cook until wilted.
- Create small wells in the mixture and crack eggs into them. Cover the pan and cook until the eggs reach the desired doneness.
- Sprinkle with cheese, salt, and pepper before serving.
