Ingredients
- 2 chicken breasts (450g)
- For the sauce:
- 5 tbsp (75 ml) Worcestershire sauce
- 1 tsp (5 ml) mustard powder
- 500g passata
- 3 tbsp (45 ml) balsamic vinegar
- 2 cloves of garlic, crushed
- 3 tbsp (45 ml) sweetener
- Salt and freshly ground black pepper
- 1 tsp (5 ml) smoked paprika
- 1/4 pint (150ml) apple juice
- Salt and pepper to taste
- 200g macaroni or your preferred pasta
- 240ml chicken stock
- 100ml coconut milk
- 200g low fat cream cheese, softened
- 200g grated low fat cheddar cheese
- 60g grated low fat mozzarella cheese
- 1 teaspoon (5 ml) English mustard
- Salt and pepper to taste
Instructions
- Boil the pasta as per the package directions until it’s firm to the bite. Drain, keeping aside some of the pasta water.
- In a large pot, mix together the chicken stock, coconut milk, and softened cream cheese. Warm over medium-low heat, stirring continuously until the cream cheese dissolves and the mixture becomes smooth.
- Add half of the grated cheddar and mozzarella cheeses to the pot, stirring until they are fully melted and the sauce is creamy.
- Flavor the sauce with salt, pepper, and English mustard to your liking.
- Combine the Worcestershire sauce, mustard powder, passata, balsamic vinegar, crushed garlic, sweetener, salt, black pepper, smoked paprika, and apple juice to create the BBQ sauce.
- Heat your grill or grill pan on the stove to medium-high.
- Sprinkle salt and pepper on the chicken breasts, then coat them with BBQ sauce on both sides.
- Grill the chicken for about 6-8 minutes on each side, ensuring they are fully cooked and no longer pink inside. Add more BBQ sauce while grilling if you wish.
- Mix the cooked pasta into the sauce, adding a few tablespoons of the reserved pasta water to achieve a glossy finish. Stir until well mixed.
- Set your oven to 175 degrees to preheat.
- Pour the macaroni and cheese mixture into a baking dish.
- Sprinkle the remaining cheese on top and drizzle with some BBQ sauce.
- Place in the preheated oven and bake for approximately 15 minutes, or until it bubbles and turns golden on top.
- Slice the chicken breasts and arrange them on top before serving.
