Description

A delightful and airy dessert made with fresh strawberries, whipped cream, and meringue, perfect for summer gatherings.


Ingredients

  • 7.5 g Unflavored gelatin (bloom 230)
  • 230 g Fresh strawberries, pureed and strained
  • 35 g Lemon juice
  • 245 g Heavy cream
  • 75 g Egg white
  • 130 g Granulated sugar for the syrup
  • 60 g Water
  • 150 g Fresh strawberries, pureed and strained
  • 13 g Granulated sugar
  • 7.5 g Lemon juice


Instructions

  1. Hydrate Gelatin: Mix gelatin powder with cold water and let it sit for about 10 minutes.
  2. Prepare Strawberries: Slice fresh strawberries, puree in a blender, and strain to remove seeds.
  3. Melt Gelatin: Heat one-third of the strawberry puree, add hydrated gelatin, and blend well.
  4. Add Lemon Juice: Mix in lemon juice and set aside at room temperature.
  5. Make Whipped Cream: Whip cold heavy cream until fluffy and stiff, then refrigerate.
  6. Prepare Meringue: Heat granulated sugar and water, whip egg whites, and combine with sugar syrup.
  7. Combine Ingredients: Fold meringue into whipped cream, add strawberry puree, and blend gently.
  8. Chill: Pipe mousse into glass cups and refrigerate until set.

Notes

Use ripe strawberries for enhanced flavor. Ensure bowls and utensils are dry and clean to properly whip egg whites.
