Ingredients
- 2 cups all-purpose flour

- 1/4 cup cold butter, cubed
- 1/2 cup heavy cream
- 1 large egg
- Zest of 1 lemon
- 2 tablespoons lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In another bowl, whisk together the cream, egg, lemon zest, and lemon juice.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Turn the dough onto a floured surface, gently knead it a few times, then pat it into a circle about 1 inch thick.
- Cut into wedges or rounds and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
