Ingredients
- 1 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup protein powder (vanilla or unflavored)
- 2 tablespoons poppy seeds
- Zest of 1 lemon
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 cup shredded coconut (optional)
Instructions
- In a mixing bowl, combine almond flour, honey or maple syrup, protein powder, poppy seeds, lemon zest, lemon juice, and salt. Stir until well combined.
- If using shredded coconut, mix it in at this stage.
- Once the mixture is thoroughly combined, use your hands to form small balls, about 1 inch in diameter.
- Place the protein balls on a baking sheet or a plate lined with parchment paper.
- Refrigerate for at least 30 minutes for them to firm up.
