Description

These lemon poppyseed protein balls are a delightful, nutritious snack perfect for any time of day, combining health benefits with scrumptious taste.


Ingredients

  • 1 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein powder (vanilla or unflavored)
  • 2 tablespoons poppy seeds
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut (optional)


Instructions

  1. In a mixing bowl, combine almond flour, honey or maple syrup, protein powder, poppy seeds, lemon zest, lemon juice, and salt. Stir until well combined.
  2. If using shredded coconut, mix it in at this stage.
  3. Once the mixture is thoroughly combined, use your hands to form small balls, about 1 inch in diameter.
  4. Place the protein balls on a baking sheet or a plate lined with parchment paper.
  5. Refrigerate for at least 30 minutes for them to firm up.
