Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tbsp poppy seeds
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, eggs, milk, lemon juice, and lemon zest until combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just blended.
- Fold in the poppy seeds.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool and enjoy plain or with a lemon glaze.
Notes
Use fresh lemons for the juice and zest for the best flavor. Let melted butter cool before adding to avoid cooking the eggs.
