Description

Delightful lemon poppyseed muffins that are bursting with zesty flavor and a unique texture from poppy seeds, perfect for breakfast or an afternoon snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp poppy seeds


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, eggs, milk, lemon juice, and lemon zest until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just blended.
  5. Fold in the poppy seeds.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool and enjoy plain or with a lemon glaze.

Notes

Use fresh lemons for the juice and zest for the best flavor. Let melted butter cool before adding to avoid cooking the eggs.
