Description

A delightful and moist lemon poppy seed bread with a yogurt base, perfect for brunch or gatherings.


Ingredients

  • 1 cup plain yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons poppy seeds
  • 1/2 cup honey


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the yogurt, sugar, eggs, and vegetable oil. Mix well until smooth.
  3. Stir in the lemon zest and lemon juice.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
  5. Fold in the poppy seeds gently.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  8. Prepare the honey lemon syrup by heating the honey and lemon juice until smooth.
  9. Let the loaf cool for 10 minutes, then brush the top with the honey lemon syrup.
  10. Allow to cool completely before slicing and serving.

Notes

For extra citrus flavor, consider adding more lemon zest. Adjust sugar to customize sweetness.
