A delightful and moist lemon poppy seed bread with a yogurt base, perfect for brunch or gatherings.
Ingredients
- 1 cup plain yogurt
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup vegetable oil
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons poppy seeds
- 1/2 cup honey
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the yogurt, sugar, eggs, and vegetable oil. Mix well until smooth.
- Stir in the lemon zest and lemon juice.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients and mix until just combined.
- Fold in the poppy seeds gently.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
- Prepare the honey lemon syrup by heating the honey and lemon juice until smooth.
- Let the loaf cool for 10 minutes, then brush the top with the honey lemon syrup.
- Allow to cool completely before slicing and serving.
Notes
For extra citrus flavor, consider adding more lemon zest. Adjust sugar to customize sweetness.
