Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 2 tablespoons poppy seeds
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, baking powder, and salt.
- Add butter and milk, and mix until smooth.
- Beat in eggs one at a time, followed by lemon juice, lemon zest, and poppy seeds.
- Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat together cream cheese, butter, and lemon juice until smooth. Gradually add powdered sugar and beat until fluffy.
- Frost the cooled cakes and serve.
