Description

A delightful cake that combines the bright flavors of lemon with the unique texture of poppy seeds, perfect for any gathering.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Add butter and milk, and mix until smooth.
  4. Beat in eggs one at a time, followed by lemon juice, lemon zest, and poppy seeds.
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. For the frosting, beat together cream cheese, butter, and lemon juice until smooth. Gradually add powdered sugar and beat until fluffy.
  8. Frost the cooled cakes and serve.

Notes

For extra lemon flavor, consider adding a pinch of lemon extract. Store in an airtight container to keep freshness.
