Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1/2 cup buttermilk
- 2 large eggs
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons poppy seeds
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, mix sugar, oil, buttermilk, eggs, lemon juice, and lemon zest until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the poppy seeds.
- Pour the batter into the prepared loaf pan and bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
