Description

A bright and zesty bread that combines the refreshing flavor of lemon with the delightful crunch of poppy seeds, perfect for afternoon tea or a tasty snack.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar, oil, buttermilk, eggs, lemon juice, and lemon zest until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Fold in the poppy seeds.
  6. Pour the batter into the prepared loaf pan and bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a stronger lemon flavor, consider adding extra lemon zest. Make sure to use room temperature ingredients for better mixing.
