Ingredients
- 1 pound (454 g) Ground Beef (99/1)
- 12 oz (340 g) Broccoli Florets, cut into small pieces
- 1 1/2 Tablespoon (24 g) Vegetable Oil, divided
- 1 1/3 cup (220 g) Orzo
- 2 Tablespoon (30 ml) s Lemon Pepper Seasoning
- 1/4 cup (60 g) Lemon Juice
- 2 Tablespoon s (30 g) Dijon Mustard
- 2 1/2 cup (600 ml) s Low Sodium Chicken Broth
- 1 cup (240 ml) Skim Milk
- 1 oz (28 g) Unsalted Butter
- 2 oz (57 g) Parmesan Cheese, grated
Instructions
- Warm a large pan over medium-high heat and add 1 tablespoon of vegetable oil. Introduce the broccoli florets, ensuring they are coated in the oil. Cook until the broccoli becomes a deep green and starts to char slightly, approximately 5-6 minutes, then remove and set aside.
- Add the remaining 1/2 tablespoon of vegetable oil to the skillet, followed by the ground beef. Sear one side for 3-4 minutes before breaking it apart and cooking thoroughly.
- With the beef cooked, move it to the side of the pan and introduce the orzo. Allow it to toast for 1-2 minutes until it turns golden. Then, incorporate the lemon pepper seasoning, lemon juice, Dijon mustard, and chicken broth. Mix well, cover the pan, and allow the mixture to cook for 8-10 minutes while stirring every 2-3 minutes until the liquid is absorbed.
- Turn the heat down to low and blend in the unsalted butter, skim milk, and grated Parmesan cheese. Return the cooked broccoli to the pan and combine all ingredients together.
- Present the dish with a topping of freshly grated black pepper and Parmesan, a sprinkle of chili flakes, a dash of vegetable oil or Calabrian chili oil, and a squeeze of lemon juice for added flavor.
