A light and fluffy dessert combining rich mascarpone cheese with the refreshing zing of lemon.
Ingredients
- 6 ounces mascarpone cheese, cold
- 1 1/2 tablespoons granulated sugar, divided
- 1/2 cup heavy cream, cold
- 1/2 teaspoon pure vanilla extract
- Pinch of salt
- 1 tablespoon lemon juice, freshly squeezed and cold
Instructions
- In a medium bowl, combine mascarpone cheese and 1 tablespoon of granulated sugar. Beat on high speed until smooth and creamy.
- In a separate bowl, whip the heavy cream with the remaining 1/2 tablespoon of granulated sugar, vanilla extract, and a pinch of salt until soft peaks form.
- Gently fold the whipped cream mixture into the mascarpone mixture using a spatula.
- Fold in the freshly squeezed lemon juice until fully incorporated.
- Serve immediately or chill until ready to enjoy.
Notes
Use fresh lemons for the best flavor. Consider adding lemon zest for extra zest. Garnish with mint or powdered sugar for presentation.
