Ingredients
- – 4 large chicken breasts (skinless + boneless) (about 1 kg)
- – 1/4 cup olive oil (60 ml)
- – 1/4 cup lemon juice (60 ml)
- – zest of 1 lemon
- – 3 garlic cloves crushed
- – 1 tsp (5 ml) oregano
- – 2 tsp (10 ml) dried mixed herbs
- – 2 tsp (10 ml) fresh thyme leaves
- – 1/2 tsp (3 ml) paprika
- – 1/2 tsp (3 ml) chilli flakes
- – 2 tsp (10 ml) salt
Instructions
- Position the chicken breasts between two sheets of parchment or baking paper and gently pound them to even thickness with a meat mallet or rolling pin.
- Combine the marinade components by whisking them together thoroughly.
- Transfer the chicken into a glass dish and drizzle the marinade over it. Ensure the chicken is evenly coated, then cover and refrigerate, allowing it to marinate for a minimum of 20 minutes or as long as 24 hours.
- To prepare the chicken breasts, preheat a skillet, pan, or grill, then place the chicken in it and cook for 3-5 minutes on each side, depending on their thickness, until they are fully cooked but remain juicy.
- Take the chicken off the heat and cover it with foil, letting it rest for 5-10 minutes before serving.
