Ingredients

  • – 4 large chicken breasts (skinless + boneless) (about 1 kg)
  • – 1/4 cup olive oil (60 ml)
  • – 1/4 cup lemon juice (60 ml)
  • – zest of 1 lemon
  • – 3 garlic cloves crushed
  • – 1 tsp (5 ml) oregano
  • – 2 tsp (10 ml) dried mixed herbs
  • – 2 tsp (10 ml) fresh thyme leaves
  • – 1/2 tsp (3 ml) paprika
  • – 1/2 tsp (3 ml) chilli flakes
  • – 2 tsp (10 ml) salt


Instructions

  1. Position the chicken breasts between two sheets of parchment or baking paper and gently pound them to even thickness with a meat mallet or rolling pin.
  2. Combine the marinade components by whisking them together thoroughly.
  3. Transfer the chicken into a glass dish and drizzle the marinade over it. Ensure the chicken is evenly coated, then cover and refrigerate, allowing it to marinate for a minimum of 20 minutes or as long as 24 hours.
  4. To prepare the chicken breasts, preheat a skillet, pan, or grill, then place the chicken in it and cook for 3-5 minutes on each side, depending on their thickness, until they are fully cooked but remain juicy.
  5. Take the chicken off the heat and cover it with foil, letting it rest for 5-10 minutes before serving.

Notes

  • Enhance the flavor by adding fresh parsley or a squeeze of lemon before serving. Use a meat thermometer to avoid overcooking and keep the chicken juicy. Customize the marinade with different herbs and spices to suit your taste preferences.
