Ingredients

Instructions
- In a mixing bowl, combine the chia seeds, almond milk, maple syrup, lemon zest, lemon juice, vanilla extract, and salt.
- Stir well to combine, ensuring there are no clumps of chia seeds.
- Let the mixture sit for 5-10 minutes, then stir again to avoid lumps.
- Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens to a pudding-like consistency.

Notes
For a thicker pudding, consider adding a few extra chia seeds. Adjust sweetness to taste and try adding spices for a twist.
