Ingredients
- 1 cup (240 ml) orzo pasta
- 2 tablespoon (30 ml) s olive oil
- 1 pound (454 g) chicken breast, diced
- 1 teaspoon (5 ml) garlic powder
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 cup (240 ml) broccoli florets
- 2 tablespoon (30 ml) s lemon juice
- 1 teaspoon (5 ml) lemon zest
- 1/2 teaspoon (3 ml) dried oregano
- 1/4 teaspoon (1 ml) red pepper flakes (optional for heat)
- 1/4 cup (60 ml) grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Prepare the orzo pasta following the package directions. Once cooked, drain and put aside.
- Warm up 1 tablespoon of olive oil in a large frying pan over medium heat. Introduce the diced chicken, garlic powder, salt, and black pepper. Cook until the chicken is browned and thoroughly done. Take out of the pan and reserve.
- Using the same pan, pour in the remaining olive oil. Toss in the zucchini, bell pepper, and broccoli. Stir-fry for 3-4 minutes until they are tender but still slightly crunchy.
- Add the cooked orzo and chicken back to the pan. Mix in the lemon juice, lemon zest, oregano, and red pepper flakes, stirring continuously for another 2 minutes.
- Top with grated Parmesan cheese and decorate with fresh parsley. Serve while hot.
