- 2 tablespoons maple syrup (or honey)
- Zest of 1 lemon

Instructions
- In a mixing bowl, whisk together the almond milk, maple syrup, lemon zest, lemon juice, and vanilla extract.
- Stir in the chia seeds until fully combined.
- Let the mixture sit for about 10 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens.
- Serve chilled, garnished with additional lemon zest or fresh fruit if desired.
