Description

Ingredients

  • 1 egg
  • 100g soft butter
  • 100g sugar
  • 1 lemon (juiced and zested)
  • 300g flour
  • 11g baking powder
  • Additional sugar for dusting
  • Icing sugar for decoration


Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
  2. In a mixing bowl, cream together the soft butter and sugar until light and fluffy.
  3. Add the egg, lemon juice, and lemon zest, and mix until combined.
  4. In a separate bowl, combine the flour and baking powder. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, let it cool in the pan for 10 minutes before transferring to a wire rack.
  8. Dust with additional sugar and icing sugar before serving.
