Ingredients
- 1 egg
- 100g soft butter
- 100g sugar
- 1 lemon (juiced and zested)
- 300g flour
- 11g baking powder
- Additional sugar for dusting
- Icing sugar for decoration
Instructions
- Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
- In a mixing bowl, cream together the soft butter and sugar until light and fluffy.
- Add the egg, lemon juice, and lemon zest, and mix until combined.
- In a separate bowl, combine the flour and baking powder. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, let it cool in the pan for 10 minutes before transferring to a wire rack.
- Dust with additional sugar and icing sugar before serving.
