Ingredients
- – 4 cod fillets (about 170g each)
- – 1/4 cup (60ml) vegetable oil, melted
- – 2 cloves garlic, minced
- – 1 teaspoon (5 ml) garlic powder
- – 1 teaspoon (5 ml) onion powder
- – zest from one lemon
- – 2 tablespoons (30ml) lemon juice, freshly squeezed
- – 1/4 teaspoon (1 ml) red pepper flakes
- – 1 tablespoon (15 ml) fresh parsley, chopped
- – 1 lemon, cut in slices
Instructions
- Start by setting your oven to 400°F.
- In a medium bowl, blend together the vegetable oil, minced garlic, garlic powder, onion powder, lemon zest, lemon juice, and red pepper flakes. Coat the cod fillets with this mixture by tossing them in the bowl.
- Arrange the cod fillets in a 9×13-inch baking dish, then drizzle any remaining sauce over them. Arrange the lemon slices around and on top of the fish.
- Move the baking dish to the oven and cook for 10-15 minutes.
- Sprinkle fresh parsley over the cod and serve right away.
