Ingredients

  • 1 cup low-fat cottage cheese
  • 1 cup fresh blueberries (plus extra for garnish)
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • A pinch of salt


Instructions

  1. Combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt in a mixing bowl, being cautious to avoid crushing the blueberries.
  2. Chill the mixture in the refrigerator for 15–20 minutes to help it firm up.
  3. Scoop portions with a tablespoon and roll them into tight, compact balls, placing them on a baking sheet lined with parchment paper.
