Ingredients
- 1 lb ground beef or sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups water
- 2 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Grated Parmesan cheese for serving
Instructions
- In a large pot, brown the ground beef or sausage over medium heat. Add the chopped onion and minced garlic; sauté until the onion turns transparent.
- Stir in the crushed tomatoes, broth, water, dried basil, dried oregano, salt, and pepper. Bring the mixture to a boil.
- Add the broken lasagna noodles and cook until they become tender, about 10-15 minutes.
- Stir in the ricotta and half of the mozzarella cheese, combining them well into the soup.
- Serve hot, garnished with the remaining mozzarella and grated Parmesan for a delightful finish.
Notes
For a creamier soup, consider adding a bit of cream or additional ricotta cheese right before serving. Customize with different herbs or vegetables as desired.
