Description

A comforting and hearty soup that combines the classic flavors of lasagna in an easy-to-make format, perfect for cold evenings and casual gatherings.


Ingredients

  • 1 lb ground beef or sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Grated Parmesan cheese for serving


Instructions

  1. In a large pot, brown the ground beef or sausage over medium heat. Add the chopped onion and minced garlic; sauté until the onion turns transparent.
  2. Stir in the crushed tomatoes, broth, water, dried basil, dried oregano, salt, and pepper. Bring the mixture to a boil.
  3. Add the broken lasagna noodles and cook until they become tender, about 10-15 minutes.
  4. Stir in the ricotta and half of the mozzarella cheese, combining them well into the soup.
  5. Serve hot, garnished with the remaining mozzarella and grated Parmesan for a delightful finish.

Notes

For a creamier soup, consider adding a bit of cream or additional ricotta cheese right before serving. Customize with different herbs or vegetables as desired.
