Description

Delicious and simple king oyster mushroom tacos that elevate your meal with earthy flavors and vibrant spices.


Ingredients

  • 1 pound of King Oyster Mushrooms (about 6 medium mushrooms)
  • 1/2 tsp garlic powder or minced garlic
  • 2 tbsp dark soy sauce, tamari, or salsa maggie
  • 1/2 tsp cumin powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 tsp chili powder (optional)
  • 1-2 tbsp avocado oil
  • 810 corn tortillas
  • 1/2 small onion
  • Cilantro
  • Salsa of choice
  • Lime wedges


Instructions

  1. Use a fork to shred the king oyster mushrooms until they resemble strands.
  2. In a bowl, add all sauce ingredients and whisk them together until well combined.
  3. Heat a skillet over medium-high heat and add avocado oil. Once the oil is hot, add the shredded mushrooms. Cook for about 5-6 minutes.
  4. Pour the sauce and spice blend over the mushrooms and stir. Cook until they turn golden brown or until the texture meets your preference.
  5. Warm the corn tortillas on a separate skillet until pliable.
  6. Assemble your tacos with the seasoned mushrooms, diced onion, fresh cilantro, and your choice of salsa. Serve with lime wedges on the side for a zesty finish.
