Ingredients
- 1 pound of King Oyster Mushrooms (about 6 medium mushrooms)
- 1/2 tsp garlic powder or minced garlic
- 2 tbsp dark soy sauce, tamari, or salsa maggie
- 1/2 tsp cumin powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/2 tsp chili powder (optional)
- 1-2 tbsp avocado oil
- 8–10 corn tortillas
- 1/2 small onion
- Cilantro
- Salsa of choice
- Lime wedges
Instructions
- Use a fork to shred the king oyster mushrooms until they resemble strands.
- In a bowl, add all sauce ingredients and whisk them together until well combined.
- Heat a skillet over medium-high heat and add avocado oil. Once the oil is hot, add the shredded mushrooms. Cook for about 5-6 minutes.
- Pour the sauce and spice blend over the mushrooms and stir. Cook until they turn golden brown or until the texture meets your preference.
- Warm the corn tortillas on a separate skillet until pliable.
- Assemble your tacos with the seasoned mushrooms, diced onion, fresh cilantro, and your choice of salsa. Serve with lime wedges on the side for a zesty finish.
