Description

A delightful twist on a classic favorite, this creamy keto loaded cauliflower soup is rich in flavor while remaining low in carbs. Topped with crispy bacon and cheddar cheese, it’s a heartwarming dish perfect for chilly evenings.


Ingredients

  • 1 head of cauliflower, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices of bacon, cooked and crumbled
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. In a large pot, add the chopped cauliflower and chicken broth. Bring to a boil and cook until the cauliflower is tender, about 10-15 minutes.
  2. Use an immersion blender or transfer to a blender to puree the soup until smooth.
