Ingredients
- 2 tablespoons avocado oil (30 ml)
- 1 small onion, diced
- 2 sticks celery, diced
- 2 cloves garlic, minced
- 1 pound lean ground beef (450 g)
- 1 teaspoon (5 ml) fine salt
- 1 teaspoon (5 ml) dried parsley
- 1 teaspoon (5 ml) garlic powder
- 1/2 teaspoon (3 ml) dried oregano
- 2 tablespoons (30 ml) mayo
- 2 tablespoons (30 ml) Dijon mustard
- 3 cups (720 ml) beef broth
- 2 tablespoons (30 ml) apple cider vinegar (optional)
- Sliced pickles
- Turkey bacon
- Shredded lettuce
- Green olives
Instructions
- Place a large pot on the stove set to medium heat. Pour in the avocado oil.
- Once the oil is hot, add the diced onion, celery, and minced garlic to the pot.
- Cook the vegetables, stirring occasionally, until they become soft and fragrant, roughly 8 minutes.
- Add the lean ground beef to the pot and sprinkle in the salt, parsley, garlic powder, and oregano. Break apart the beef and mix with a whisk.
- Continue cooking, stirring frequently, until the beef is browned, about 8 minutes.
- Stir in the mayonnaise and Dijon mustard until the mixture is smooth and creamy.
- Pour in the beef broth and apple cider vinegar if using. Mix thoroughly, cover the pot, and let it simmer for 20 minutes.
- Remove the lid and increase the heat to bring the soup to a boil, stirring continuously for 5 minutes. Remove from heat.
