Ingredients

  • 2 tablespoons avocado oil (30 ml)
  • 1 small onion, diced
  • 2 sticks celery, diced
  • 2 cloves garlic, minced
  • 1 pound lean ground beef (450 g)
  • 1 teaspoon (5 ml) fine salt
  • 1 teaspoon (5 ml) dried parsley
  • 1 teaspoon (5 ml) garlic powder
  • 1/2 teaspoon (3 ml) dried oregano
  • 2 tablespoons (30 ml) mayo
  • 2 tablespoons (30 ml) Dijon mustard
  • 3 cups (720 ml) beef broth
  • 2 tablespoons (30 ml) apple cider vinegar (optional)
  • Sliced pickles
  • Turkey bacon
  • Shredded lettuce
  • Green olives


Instructions

  1. Place a large pot on the stove set to medium heat. Pour in the avocado oil.
  2. Once the oil is hot, add the diced onion, celery, and minced garlic to the pot.
  3. Cook the vegetables, stirring occasionally, until they become soft and fragrant, roughly 8 minutes.
  4. Add the lean ground beef to the pot and sprinkle in the salt, parsley, garlic powder, and oregano. Break apart the beef and mix with a whisk.
  5. Continue cooking, stirring frequently, until the beef is browned, about 8 minutes.
  6. Stir in the mayonnaise and Dijon mustard until the mixture is smooth and creamy.
  7. Pour in the beef broth and apple cider vinegar if using. Mix thoroughly, cover the pot, and let it simmer for 20 minutes.
  8. Remove the lid and increase the heat to bring the soup to a boil, stirring continuously for 5 minutes. Remove from heat.
