  • 3/4 teaspoon curry powder (4 g)
  • 3/4 teaspoon ground coriander (4 g)
  • 1 pound sweet potatoes, peeled and cut into 1/2-inch cubes (450 g)
  • 4 cups vegetable broth (960 ml)
  • 4 cups chopped kale (240 g)
  • 1 (15.5 ounce) can chickpeas, drained (440 g)
  • 1 cup coconut milk (240 ml)


Instructions

  1. Warm the olive oil in a large pot over medium-high heat.
  2. Add the diced onion and minced garlic; cook for 2 minutes, stirring occasionally.
  3. Mix in the ground turmeric, curry powder, and ground coriander.
  4. Incorporate the sweet potato cubes; cook for an additional 2 to 3 minutes, stirring often.
  5. Pour in the vegetable broth and bring the mixture to a gentle boil.
  6. Cover the pot and continue to cook until the sweet potatoes start to soften, about 8 to 10 minutes.
  7. Add the chopped kale and drained chickpeas; let it cook for another 5 minutes.
  8. Stir in the coconut milk and adjust the seasoning with salt as needed.
