Description

Delightful pancakes made from Jiffy Cornbread Mix, perfect for breakfast or as a comforting side dish.


Ingredients

  • 1 box Jiffy Cornbread Mix
  • 1 cup milk
  • 1 egg
  • 1 tablespoon vegetable oil
  • Butter or oil for frying


Instructions

  1. In a mixing bowl, whisk together the Jiffy Cornbread Mix, milk, egg, and vegetable oil until just combined.
  2. Heat a skillet or griddle over medium heat and add a bit of butter or oil.
  3. Pour batter onto the skillet, using about 1/4 cup for each pancake.
  4. Cook until bubbles form on the surface and the edges look set, then flip and cook until the other side is golden brown.
  5. Serve warm with butter and syrup, or as a side dish.

Notes

Allow the batter to rest for a few minutes after mixing for better texture. Add corn kernels or diced jalapeños for extra flavor.
