Delightful pancakes made from Jiffy Cornbread Mix, perfect for breakfast or as a comforting side dish.
Ingredients
- 1 box Jiffy Cornbread Mix
- 1 cup milk
- 1 egg
- 1 tablespoon vegetable oil
- Butter or oil for frying
Instructions
- In a mixing bowl, whisk together the Jiffy Cornbread Mix, milk, egg, and vegetable oil until just combined.
- Heat a skillet or griddle over medium heat and add a bit of butter or oil.
- Pour batter onto the skillet, using about 1/4 cup for each pancake.
- Cook until bubbles form on the surface and the edges look set, then flip and cook until the other side is golden brown.
- Serve warm with butter and syrup, or as a side dish.
Notes
Allow the batter to rest for a few minutes after mixing for better texture. Add corn kernels or diced jalapeños for extra flavor.
