Delicious Jiffy cornbread pancakes that are fluffy and full of flavor, perfect for breakfast, brunch, or as a side dish.
Ingredients
- 1 package Jiffy cornbread mix
- 1 cup milk
- 1 egg
- 1 tablespoon sugar (optional)
- 1 tablespoon butter (melted)
- Cooking spray or additional butter for frying
Instructions
- In a bowl, combine the Jiffy cornbread mix, milk, egg, sugar, and melted butter. Mix until just combined.
- Heat a non-stick skillet or griddle over medium heat and grease with cooking spray or butter.
- Pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes until golden brown.
- Serve warm with butter and syrup, or as a side dish.
Notes
For extra flavor, consider adding chocolate chips, corn kernels, or jalapeños. Adjust sugar levels based on your mix-ins.
