Description

Delicious Jiffy cornbread pancakes that are fluffy and full of flavor, perfect for breakfast, brunch, or as a side dish.


Ingredients

  • 1 package Jiffy cornbread mix
  • 1 cup milk
  • 1 egg
  • 1 tablespoon sugar (optional)
  • 1 tablespoon butter (melted)
  • Cooking spray or additional butter for frying


Instructions

  1. In a bowl, combine the Jiffy cornbread mix, milk, egg, sugar, and melted butter. Mix until just combined.
  2. Heat a non-stick skillet or griddle over medium heat and grease with cooking spray or butter.
  3. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes until golden brown.
  5. Serve warm with butter and syrup, or as a side dish.

Notes

For extra flavor, consider adding chocolate chips, corn kernels, or jalapeños. Adjust sugar levels based on your mix-ins.
