Description

A vibrant bowl of jerk chicken paired with fresh pineapple salsa over a bed of fluffy rice, capturing the essence of summer gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons jerk seasoning
  • 1 cup white or brown rice
  • 1 cup pineapple, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste


Instructions

  1. Marinate the chicken breasts with jerk seasoning for at least 30 minutes.
