Ingredients
- 3 large eggs (50 g each w/o shell)
- 1/4 tsp (1 ml) sugar
- 1/4 tsp (1 ml) kosher salt
- 3/8 tsp (2 ml) freshly ground black pepper
- 2 tsp (10 ml) milk
- 2 Tbsp (30 ml) Japanese Kewpie mayonnaise
- 4 slices shokupan (Japanese milk bread) (or make homemade Shokupan; the same thickness as those from a square shokupan loaf cut into 8 slices)

Instructions
- Collect all necessary items.
- Place the three large eggs in a medium pot and submerge them in water until covered by about an inch. Heat the water on medium until it begins to boil. Allow the eggs to cook for 12 minutes.
- When the cooking time is up, move the eggs to a bowl of ice water to halt further cooking. Wait until they are fully cooled, then remove the shells.
- Place the shelled eggs in a bowl and use a fork to crush them, ensuring the egg whites break down into evenly sized bits.
- Incorporate 1/4 teaspoon of sugar and 1/4 teaspoon of kosher salt into the mashed eggs.
- Stir in 3/8 teaspoon of freshly ground black pepper along with 2 teaspoons of milk.
- Mix in 2 tablespoons of Japanese Kewpie mayonnaise, blending thoroughly. Adjust seasoning with more salt and pepper to taste, if necessary.
- Prepare four slices of Japanese milk bread by spreading salted butter on one side of each. For each sandwich, layer the egg mixture onto one buttered slice.
- Place the remaining slice, buttered side facing the egg mixture, on top to form a sandwich. Compress slightly by placing the sandwiches between two plates and let them rest for 5 minutes.
- Remove the crusts from the bread. Consider saving the crusts to create crunchy, buttery Shokupan Crust Rusks, either immediately or by freezing for later use.
- Divide the sandwiches into halves. They are now ready to enjoy.
- Any extra sandwiches can be kept in a sealed container in the fridge for up to 2 days.
