A delicious Jamaican banana bread recipe featuring ripe bananas and toasted coconut for a tropical twist.
Ingredients
- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup toasted coconut
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
- Mix in the baking soda and a pinch of salt. Stir in the sugar, beaten egg, and vanilla extract until well combined.
- Add the flour and mix until just combined. Then fold in the toasted coconut.
- Pour the batter into the greased loaf pan and bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
For added flavor, you can experiment with nuts or other fruits like pineapple or mango. Ensure all ingredients are at room temperature for best results.
