Description

A cozy and flavorful soup that combines the deliciousness of jalapeño poppers with a creamy base, perfect for warming up on chilly days.

Ingredients

  • 2 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup jalapeños, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup corn (fresh or canned)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Sauté the chopped onion and minced garlic in a large pot until translucent.
  2. Add the diced jalapeños and cook for an additional 2-3 minutes.
  3. Stir in the chicken broth and corn, bringing the mixture to a gentle simmer.
  4. Lower the heat and incorporate the cream cheese, stirring until it melts smoothly.
  5. Add the shredded cheddar cheese, cumin, salt, and pepper, stirring until melted and combined.
  6. Cook for another 5 minutes, stirring occasionally.
  7. Serve hot, garnished with chopped green onions.

Notes

For a milder flavor, remove the seeds from the jalapeños. Consider adding protein like shredded chicken for a heartier meal.
