Ingredients

  • – 2 cups (240g) chocolate graham cracker crumbs
  • – 8 tbsp (113g) beef butter, melted
  • – 1/3 cup (67g) sugar
  • – 16 ounces (454g) cream cheese, 2 blocks, softened
  • – 2/3 cup (133g) sugar
  • – 2 eggs
  • – 2/3 cups (160ml) sour cream
  • – 1 tsp (5 ml) vanilla
  • – orange gel food coloring
  • – 1/2 cup (90g) semi-sweet chocolate chips
  • – 3 tbsp (45ml) heavy cream


Instructions

  1. Set your oven to 350°F and prepare a muffin tin by placing paper liners in each cup.
  2. In a medium bowl, combine the chocolate graham cracker crumbs with melted beef butter and mix with 1/3 cup of sugar. Place roughly 2 tablespoons of this crust mixture into each liner and press down firmly.
  3. Use an electric mixer to beat the softened cream cheese until it becomes airy, then gradually blend in the sugar until fully combined.
  4. Incorporate the vanilla extract and add the eggs one by one, mixing thoroughly after each addition. Mix in the sour cream until it is well blended. Add drops of orange gel food coloring, continuing to mix until you reach your preferred shade of orange.
  5. Distribute the cream cheese mixture evenly over the prepared crusts, filling each to about 3/4 full.
  6. Lightly tap the muffin tin on a counter or table to bring any trapped air bubbles to the top. Shake the pan gently to help level and smooth the tops of the cheesecakes. If needed, use a toothpick or skewer to carefully smooth the surface and eliminate bubbles.
  7. Put the muffin tin into the preheated oven and bake for 15-18 minutes, until the tops are no longer shiny but the centers still have a slight jiggle.
  8. Take the pan out of the oven and let the cheesecakes cool down fully.
  9. For the ganache, mix the semi-sweet chocolate chips with heavy cream in a microwave-safe bowl, heat for 45 seconds, then let it sit for 3 minutes.
  10. Stir the mixture until it’s smooth. If lumps remain, microwave in 10-second bursts, stirring each time, until completely smooth.
  11. Transfer the chocolate ganache into a piping bag and use it to create jack-o’-lantern faces on the cheesecakes.
  12. Keep the decorated cheesecakes refrigerated until you’re ready to enjoy them.
