Ingredients
- 4 slices of Genoa salami
- 4 slices of mortadella
- 4 slices of sopressata
- 4 slices of pepperoni
- 4 slices of provolone (omit for a dairy-free option)
- Paleo lime mayo or preferred store-bought mayo
- Shredded lettuce
- Optional toppings: banana peppers, jalapeño peppers, roasted red peppers, black olives
- Avocado oil or olive oil
- Apple cider vinegar
- Italian seasoning
- Toothpicks
Instructions
- Layer the meat slices from largest to smallest, starting with Genoa salami, followed by mortadella, sopressata, and then pepperoni.
- Spread a thin layer of mayo across the meat stack, keeping the top clear, and add a slice of provolone halfway down.
- Add shredded lettuce to the lower half and sprinkle any additional toppings you wish.
- Roll the stack tightly from the bottom, pushing in fillings as you go, and secure with a toothpick.
- Mix 2 parts oil and 1 part apple cider vinegar in a dipping ramekin and sprinkle Italian seasoning on top.
