Description

Delicious Italian sub flavors rolled up without bread, making for a savory and satisfying meal.


Ingredients

  • 4 slices of Genoa salami
  • 4 slices of mortadella
  • 4 slices of sopressata
  • 4 slices of pepperoni
  • 4 slices of provolone (omit for a dairy-free option)
  • Paleo lime mayo or preferred store-bought mayo
  • Shredded lettuce
  • Optional toppings: banana peppers, jalapeño peppers, roasted red peppers, black olives
  • Avocado oil or olive oil
  • Apple cider vinegar
  • Italian seasoning
  • Toothpicks


Instructions

  1. Layer the meat slices from largest to smallest, starting with Genoa salami, followed by mortadella, sopressata, and then pepperoni.
  2. Spread a thin layer of mayo across the meat stack, keeping the top clear, and add a slice of provolone halfway down.
  3. Add shredded lettuce to the lower half and sprinkle any additional toppings you wish.
  4. Roll the stack tightly from the bottom, pushing in fillings as you go, and secure with a toothpick.
  5. Mix 2 parts oil and 1 part apple cider vinegar in a dipping ramekin and sprinkle Italian seasoning on top.
  6. Serve the roll-ups with the dip for a delightful dining experience.
