Ingredients

  • 1 Tablespoon (15 ml) vegetable oil
  • 3 celery ribs – sliced
  • 3 medium carrots – sliced
  • 1 large yellow onion – chopped
  • 3 garlic cloves – minced
  • 1 Tablespoon (15 ml) Italian seasoning
  • 2 teaspoons (10 ml) granulated sugar
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) ground black pepper
  • 1 dried bay leaf
  • 6 cups (1.4 L) beef broth
  • 1 (425 g) can petite diced tomatoes
  • 1 (225 g) can tomato sauce
  • 1 lb. (450 g) boneless skinless chicken breast – cut into bite-size chunks
  • 8 oz. (225 g) penne pasta – half a 1 pound box
  • 3 cups (720 ml) fresh baby spinach leaves
  • Optional: grated Parmesan cheese for topping


Instructions

  1. Pour the vegetable oil into a large soup pot and heat on medium-high for one minute. Add the sliced celery, sliced carrots, and chopped onion. Sauté for five minutes, stirring occasionally.
  2. Introduce the minced garlic, Italian seasoning, granulated sugar, salt, ground black pepper, and bay leaf. Stir frequently and cook for one minute.
  3. Pour in the beef broth, petite diced tomatoes, and tomato sauce. Allow the mixture to reach a boil. Add in the chicken pieces and penne pasta.
  4. Lower the heat to medium-low and let it simmer for eight minutes, stirring from time to time.
  5. Incorporate the baby spinach leaves and continue to simmer for an additional two minutes, stirring occasionally.
  6. Take the pot off the heat and let the soup sit for five minutes before serving. Optionally, top each serving with grated Parmesan cheese.

Notes

  • Try using whole wheat penne pasta or another high-fiber pasta for a heartier soup.
  • Consider using fire-roasted diced tomatoes for a smoky flavor twist.
