Ingredients
- 1 pound beef sausage (450g)
- 1 clove garlic, minced
- 2 cans beef broth (400g each)
- 1 can Italian-style stewed tomatoes (400g)
- 1 cup sliced carrots (240ml)
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) ground black pepper
- 1 can great Northern beans, undrained (400g)
- 2 small zucchini, cubed
- 2 cups spinach – packed, rinsed and torn (60g)
Instructions
- Prepare all the necessary ingredients.
- In a large pot or Dutch oven, warm on medium-high heat. Introduce the sausage and garlic; sauté until they turn brown, roughly 5 to 7 minutes.
- Mix in the broth, tomatoes, and carrots; season with salt and black pepper. Lower the heat to medium-low, cover, and let it gently cook for 15 minutes.
- Add the beans with their liquid and the diced zucchini; cover again and continue cooking for an additional 15 minutes, or until the zucchini becomes soft.
- Take the pot off the heat and incorporate the spinach; put the lid back on and let the spinach wilt.
- Stir until everything is heated thoroughly. Serve and savor!
