Description

A heartwarming Italian sausage pasta soup that combines rich flavors and hearty ingredients, perfect for cozy gatherings.


Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, chopped
  • 1 zucchini, chopped
  • 3 cups vegetable broth
  • 2 cups water
  • 1 can (14 oz) diced tomatoes
  • 1 cup pasta (your choice)
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add diced onions, bell peppers, and celery. Sauté until softened, around 4-5 minutes. Add garlic and stir for another minute until fragrant.
  3. Return the sausage to the pot. Stir in the diced tomatoes, vegetable broth, water, and Italian seasoning. Bring to a boil.
  4. Once boiling, add pasta, reduce heat, and simmer until the pasta is tender, usually about 8-10 minutes. Season with salt and pepper to taste.
  5. Finally, stir in chopped zucchini and cook for another 2-3 minutes. Serve hot, garnished with fresh parsley.

Notes

Feel free to experiment with different vegetables and pasta shapes for variety. Adding a splash of heavy cream can make the soup creamier.
