Ingredients
- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 stalks celery, chopped
- 1 zucchini, chopped
- 3 cups vegetable broth
- 2 cups water
- 1 can (14 oz) diced tomatoes
- 1 cup pasta (your choice)
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, add diced onions, bell peppers, and celery. Sauté until softened, around 4-5 minutes. Add garlic and stir for another minute until fragrant.
- Return the sausage to the pot. Stir in the diced tomatoes, vegetable broth, water, and Italian seasoning. Bring to a boil.
- Once boiling, add pasta, reduce heat, and simmer until the pasta is tender, usually about 8-10 minutes. Season with salt and pepper to taste.
- Finally, stir in chopped zucchini and cook for another 2-3 minutes. Serve hot, garnished with fresh parsley.
Notes
Feel free to experiment with different vegetables and pasta shapes for variety. Adding a splash of heavy cream can make the soup creamier.
