Ingredients
- 20 large tomatoes (about 4.5 kg)
- 1/3 cup vegetable oil (80 ml)
- 6 cloves of garlic, minced
- 1 white sweet large onion, diced
- 1 Tbsp (15 ml) Italian seasoning
- 1 Tbsp (15 ml) sugar
- Fresh sprigs of rosemary, thyme, and oregano
- Salt and pepper
- Parchment paper
Instructions
- Cover a large baking sheet with parchment paper and place it to the side. Set your oven to preheat at 300°F. Cut the large tomatoes in half and put them in a big bowl. Combine with the vegetable oil, minced garlic, diced onion, Italian seasoning, and sugar, then stir gently.
- Arrange the halved tomatoes with the cut side facing up on the prepared baking sheet. Place the onions on top of the tomatoes. Season generously with salt and pepper, and then tear the rosemary, thyme, and oregano leaves from their stems and sprinkle them on top.
- Bake in the oven for 60 minutes. Increase the oven temperature to 425°F and continue baking for an additional 15-20 minutes until they are slightly charred. Enjoy them warm from the tray or let them cool and blend them into a delicious sauce.
