- 4 cups vegetable broth

- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup spinach or kale, chopped
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Juice of 1 lemon
- Optional: cooked rice or quinoa
Instructions
- Heat a small amount of oil in a large pot over medium heat.
- Add the chopped onion and minced garlic; sauté until onion is translucent.
- Introduce the diced carrots and celery; cook for an additional 5-7 minutes.
- Pour in the vegetable broth and stir in the oregano, salt, and pepper. Bring to a gentle simmer.
- Add the chopped spinach or kale and let them wilt into the broth.
