Ingredients
- 1 yellow or white onion, roughly chopped
- 2 carrots, roughly chopped
- 2 celery sticks, roughly chopped
- 6 cups chicken or vegetable broth
- 1 Parmesan rind
- 1 cup pastina pasta (or other small pasta)

- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
- Chop the onion, carrots, and celery.
- In a large pot, combine the chopped vegetables, broth, and Parmesan rind. Bring to a boil over high heat.
- Reduce heat, cover, and let simmer for 15-18 minutes until vegetables are tender.
- Remove softened vegetables using a strainer, and blend with ½-1 cup of broth until smooth.
- Return pureed mixture to the pot, add pastina, and simmer for 7-9 minutes until pasta is tender.
- Turn off heat, season with grated Parmesan, salt, and black pepper, and serve garnished with parsley.
Notes
For a thicker soup, use less broth while blending. Experiment with seasonings and different small pasta for variety.
