Description

A delightful grilled cheese burrito filled with savory ground beef, melted cheeses, and a hint of spice, perfect for comfort food lovers.

Ingredients

  • 1 pound Ground Beef (can substitute with turkey or plant-based)
  • 1 packet Taco Seasoning (make your own for a healthier option)
  • 2 cups Cooked White Rice (substitute with brown rice or quinoa if desired)
  • 1 cup Sour Cream (try yogurt or dairy-free alternatives)
  • 1 cup Nacho Cheese Sauce (homemade or vegan cheese can be used)
  • 1 cup Shredded Cheddar Cheese (mix in mozzarella or Mexican blend for flavor)
  • 1 cup Shredded Mozzarella Cheese (can be omitted or replaced with lower-fat cheese)
  • 1 tablespoon Chipotle Sauce (adjust based on spice preference)
  • 4 large Flour Tortillas (whole wheat or gluten-free are good alternatives)
  • 2 tablespoons Butter or Oil (olive oil or non-stick spray for healthier option)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if necessary.
  2. Stir in the taco seasoning, mixing well until the beef is evenly coated. Cook for about 3 minutes until flavorful.
  3. Add cooked rice to the skillet and mix thoroughly with the beef and taco seasoning.
  4. In a separate bowl, combine the sour cream and chipotle sauce, blending well for a spicy, creamy mixture.
  5. Lay out the flour tortillas on a clean surface. Spread a generous layer of the sour cream mixture on each tortilla.
  6. Evenly distribute the beef and rice mixture on top of the tortillas.
  7. Drizzle nacho cheese sauce over the beef and rice layer.
  8. Sprinkle shredded cheddar and mozzarella cheeses on top.
  9. Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top.
  10. In a clean skillet, melt butter or heat oil over medium heat.
  11. Transfer the burritos seam-side down to the skillet, cooking until golden brown and crispy, about 3-4 minutes.
  12. Carefully flip and repeat on the other side. Once cooked, remove from heat and let cool slightly before slicing.

Notes

To enhance your burritos, consider adding sautéed peppers or onions. For extra spice, mix in different cheeses or adjust chipotle sauce to taste.
