- In a large mixing bowl, briskly beat together the eggs, milk, vegetable oil, and vanilla extract.
- Quickly incorporate the flour, powdered sugar, cinnamon, baking powder, and salt, stirring until the mixture is smooth; the batter should be quite thin.
- Peel, remove cores, and slice the apples very thinly using a mandoline slicer.
- Combine the apple slices with the batter in the bowl, ensuring they are fully coated.
- Transfer the apple slices to the prepared pan gradually, flattening any pieces that stick up.
- Evenly pour the rest of the batter into the pan, filling to the top.
- Place in the oven and bake for 50-60 minutes, or until the top is a golden hue.
