  • 4 apples (about 2 lbs (907 g))


Instructions

  1. Set your oven to 350°F and prepare a 9×5-inch loaf tin by lining it with parchment paper.
  2. In a large mixing bowl, briskly beat together the eggs, milk, vegetable oil, and vanilla extract.
  3. Quickly incorporate the flour, powdered sugar, cinnamon, baking powder, and salt, stirring until the mixture is smooth; the batter should be quite thin.
  4. Peel, remove cores, and slice the apples very thinly using a mandoline slicer.
  5. Combine the apple slices with the batter in the bowl, ensuring they are fully coated.
  6. Transfer the apple slices to the prepared pan gradually, flattening any pieces that stick up.
  7. Evenly pour the rest of the batter into the pan, filling to the top.
